Chenin Blanc grapes are harvested by hand and whole bunch pressed. Fermented in 2000L stainless steel vats and 3500L Foudres using indigenous yeasts and ambient temperatures. The wine goes through malolactic fermentation before being bottled unfined and unfiltered with a very small amount of sulphur added before bottling.
